Blueberry, Kale & Quinoa Salad

The last day of my course & I made this salad.  It’s a bit fruity so nice for summer.
Time : 5 minutes (30 if cooking quinoa)
Noggin Fix:
Packing over 100%* vitamins A, C, magnesium and manganese, a further 90% vitamin D and over 25%  of B-2, B-6 and B-12 this salad is nicely rounded.   It also has some bonus vitamin B-3, antioxidant Proanthocyanidins and 50% iron to help with fatigue.  This salad will help most symptoms, but in particular insomnia, depression & anxiety,  light sensitivity and co-ordination, with the blueberries really adding to memory aid.

kale almond quinoa salad

Kale & almond quinoa salad

Serves 2 large or 4 side portions

Ingredients

1/2 cup x blueberries
1/2 cup x quinoa (pre-cooked or cook according to instructions on packet)
1 cup x water
50 g x kale (spines removed & chopped)
75 g x feta cheese, cubed
1/2 x lemon, juice
1 tbsp x olive oil
1/2 cup x sliced almonds (I only had whole ones but flaked is better)

 

Instructions

  1. Boil 1 cup of water in saucepan & add quinoa.  Cook according to instructions on packet.
  2. Meanwhile, steam kale for 5 minutes.
  3. Mix feta, kale, almonds, blueberries & quinoa in bowl.
  4. Drizzle lemon juice & olive oil over the salad & mix.
